My children arrive home from school around four o’clock in the afternoon tired and famished.  And every afternoon, I’m faced with the same challenges:  homework (there’s way too much of it), playtime (there’s never enough of it) and snacks (there are only so many satisfying and appealing options that won’t interfere with dinner).  Enter Peanut Butter Balls.  While these perfectly portioned, outrageously enjoyable treats won’t lighten the heavy homework load or extend play time, they will give my kids the extra kick they need to complete their assignments and enjoy a big game of hide-and-go-seek-tag.  A couple of these hearty snacks and a glass of milk will also tide them over without leaving them stuffed or sluggish.

This is a fun recipe to work with because the substitutions and add-ins are limitless.  As long as you stick with the same proportions of powdered milk, honey and nut butter, the recipe will turn out perfect regardless of the variations.  While I tend to make most batches with all-natural creamy peanut butter, chocolate chips and raisins, I’ve also thrown together combos of almond butter, dried cranberries and white chocolate chips.  Changing things up with crunchy peanut butter or adding chopped nuts or seeds will also help keep this snack interesting for a long time.

1 cup powdered milk
1/2 cup honey
1/2 cup peanut butter
1/2 cup semisweet chocolate chips
1/2 cup raisins

Combine all ingredients in a large bowl.  Knead dough with your hands or a wooden spoon until the powdered milk has been fully incorporated.  Scoop out one tablespoon of dough; shape into a ball.  (If dough is too sticky, add more powdered milk.)  Roll ball between your hands until smooth and shiny.  Repeat process with remaining dough.  Place Peanut Butter Balls in an airtight container; separate layers with waxed or parchment paper.  Store in the refrigerator.  Makes approximately 14 balls.
