Cilantro Pecan Mash
Ingredients
- 1 cup pecan pieces
- 1 bunch fresh cilantro, stems removed
- 1/2 cup canola or vegetable oil
- 1/4 cup grated Parmesan cheese
- 1 garlic clove
- 3/4 teaspoon Kosher salt
Instructions
Preheat oven to 350 degrees. Spread pecan pieces on baking sheet; bake for 10 minutes, checking midway to be sure they do not burn. Let cool for 5 minutes. Place pecans in a food processor or blender and chop. Add remaining ingredients; process until a spreadable paste forms. If spread is too thin, add a little more cheese. If it is too thick, add a teaspoon of water at a time until the correct consistency is reached. Cilantro-Pecan Mash can be stored covered in the refrigerator for up to two weeks. Makes about 1 cup.
