Shoepeg Corn Dip
Ingredients
- 2 12-ounce cans white shoepeg corn, drained
- 1 bunch green onions, chopped
- 1 large red bell pepper, seeded and finely chopped
- 1 fresh jalapeno pepper, seeded and finely chopped
- 1 cup grated sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 cup sour cream
- 1/4 cup mayonnaise
- 1 teaspoon parsley flakes
- Salt and pepper to taste
- Fritos Scoops corn chips, for serving
Instructions
In a large bowl, combine corn and next 8 ingredients (through parsley flakes). Season with salt and pepper. Chill at least 1 hour before serving. Serve with Fritos Scoops. Makes about 4 cups.
