Green Goddess Dressing
Ingredients
- 1/2 ripe Hass avocado
- 1/4 cup reduced fat sour cream
- 1/4 cup fat-free half-n-half
- 1/4 cup fresh lemon juice
- 1/2 teaspoon Lea & Perrins (Worcestershire sauce)
- 1 small bunch green onions, chopped
- 2 garlic cloves
- 2 teaspoons anchovy paste
- 1 cup fresh basil
- 1/4 cup fresh flat-leaf parsley
- 1/4 cup fresh cilantro
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- Pinch of cayenne pepper
- 3/4 cup extra virgin olive oil
Instructions
Place avocado and next 13 ingredients (through cayenne pepper) in a blender and process until smooth. With machine running, gradually add oil and continue processing until blended. Refrigerate until ready to serve. Makes about 2 cups.
