Preheat oven to 200 degrees. Place a large baking sheet in oven to warm. In a large shallow dish, whisk the eggs with the sugar until the sugar is dissolved. Whisk in the milk and vanilla. Add the bread slices and soak until all the custard is absorbed. Heat oil in a medium skillet over medium heat. Working in batches of two, fry the bread until golden brown on both sides, about 4 minutes total. Place on baking sheet in oven to keep warm and repeat process with remaining bread slices. Serve with a generous dusting of powdered sugar. Makes 4 servings.
