Although the calendar has not yet recognized the season, it’s summer around here. Temps are climbing close to 100, rain is scarce and the mosquitoes are hungry. And while the oppressive heat tends to diminish appetites, I think we’d all agree that it has quite the opposite effect on thirst. Finger Food Friday: Shoepeg Corn Dip

Shoepeg Corn Dip is a quick-fix, crowd-pleasing finger food perfect for Fridays or any other day of the week.  Since my parents and in-laws are heading into town today to attend my youngest daughter’s First Communion and celebrate Mother’s Day, I’m doubling the recipe so we can graze on it throughout the weekend.
