Growing up, one of my favorite poor boys was a four napkin roast beef and Swiss dressed. Four napkins, because that’s what it took to wipe the gravy trails from my forearms. Dressed, because in my world a poor boy is not a poor boy without a generous slather of mayo and layers of crisp shredded iceberg lettuce and thinly sliced tomatoes and dill pickles I’m not a hundred percent sure when and where the Swiss cheese came into play, as the roast beef-Swiss combo is not a New Orleans standard. The hubby and I have been together almost 20 years (I was really, really young when we starting dating. Wink! Wink!). And while we’re not the perfect couple, we do pride ourselves on working hard at keeping our relationship strong. A big part of that is carving out time for each other. We frequently schedule lunch dates and sneak in the occasional night out. I’m having a hard time transitioning with the seasons. Not summer to fall. Crab to oyster! Just when I thought I had had my fill of those luscious Louisiana blue crabs in all their glorious incarnations, bam! I remembered this gem of a finger food that I’ve never shared with you all. Years back, this bread was the first appetizer I made for any get-together. Then, somehow, it got overshadowed by the likes of Cajun Egg Rolls, Andouille Baked Brie and Corn Dip. Today, I’m putting it back in the limelight for reasons you’ll soon understand!

Have you all missed me? I’ve certainly missed you. The pass few weeks have been challenging. First there were all those renovations which, by the way, are not completely done but far enough along to bring some level of normalcy back to the Hogan residence. From there, I found myself ushering repairmen and furniture deliverers out and weekend company in for a 50th Anniversary party I was hosting for my wonderful in-laws.
