My first born, Chandler, is on a ceviche kick. Her enthusiasm for all types of seafood marinated in lime juice started a couple of months ago when my sister-in-law made an amazing batch for a party. Chrissy’s ceviche was full of sweet, juicy shrimp and creamy bites of avocado marinated in the perfect amount of acid and seasonings. Since then, Chandler has also tried two restaurant versions which she deemed good–just not as good as Aunt Chrissy’s! While I’ve never ordered the classic soul food combo chicken and waffles while dining out or jumped on the “midnight train” to the world-famous Gladys Knight’s Chicken and Waffles Restaurant right here in Greater Atlanta to seek out what is said to be the best representation of its kind (south of the Mason-Dixon line, that is), I’ve always loved the idea behind this dynamic duo. I introduced you all to this salsa last May when I was celebrating Cinco de Mayo South Louisiana-style. Remember my Gulf of Mexico Shrimp Tostadas? This salsa was one of the garnishments. When most people hear the word etouffée, their minds immediately jump to crawfish. That’s fair, considering this method of cooking is made most frequently with crawfish. After posting my Boiled Shrimp recipe, one of my devoted readers reached out to me via Twitter asking me to please share my Fried Shrimp secrets with her. I’m so glad she did because I thought I had already posted this one. A seafood boil is a culinary tradition we carry out every chance we get. It’s a casual outdoor cooking event where we boil mass quantities of fresh seafood, sausage and vegetables in huge pots of highly seasoned water. When the cooking’s done, we usually spread everything out on a large table lined with newspaper and invite everyone to roll up their sleeves, grab a cold beer and dig in. Have I told you how much I love Mexican food? In my world, it comes in a strong second behind my hometown favorites. I love margaritas. “Big Texas Rocks Salt” is how I order mine at our favorite neighborhood Mexican joint which I affectionately call “The Ranch” (El Ranchero). I love chips and salsa. Thin chips. Hello Shrimp and Okra Gumbo! What do you think of the new photo size? Too big maybe? I can’t decide. For Christmas, the hubby surprised me with a special gift–a Besh Box. I was reading up on this latest endeavor by Chef John Besh in the weeks preceding Christmas and was contemplating buying one myself. But I don’t recall ever mentioning that to Larry. I shouldn’t be surprised, though, by his perfect gift-giving abilities. After 20 years together, the man can pretty much read my mind.
