Now that football season is here, I know many of you are searching for one or two new items to add to your game-day buffet. I think my creamy, cheesy, garlic bread would be a perfect addition because it can fill a variety of voids. Need another finger food? Cheesy Garlic Bread holds its own as a meatless French bread pizza. How about a bread side to compliment your Creole-Italian themed menu? My recipe’s a tricked out version of the traditional garlic bread accompaniment. In search of a little something to help your guests clean their bowls from your gumbo-centric gathering? There’s enough unoccupied dough left on each slice to handle that job. Oh, and what about something hearty to assist in the absorption of alcohol? No worries. Remember, the base of my Cheesy Garlic Bread has sponge-like qualities.

And while we’re on the subject of alcohol …

How about stocking the fridge with the right beer for the occasion? Terrapin Hi-5 is perfect. This beer is one I like to classify as a “four-quarter IPA.” Four-quarter because it has a relatively low ABV (alcohol by volume) for its American IPA awesomeness (5.90% to be exact). A lower ABV means one can consume more cans of this beer without overdoing it, as compared to an IPA measuring 7.2 or 8.0. An important matter to consider when you have a house full of company over to watch a football game that has four quarters and can take more than three hours to play out. And if, by some slim chance, a friend or family member does end up over-imbibing, feed them more Cheesy Garlic Bread and call them a cab.

Cheesy Garlic Bread Recipe

1 12-inch loaf French bread, sliced in half lengthwise
4 tablespoons butter
1/4 cup thinly sliced green onions
4 garlic cloves, minced
4 ounces cream cheese, softened
1 cup grated sharp cheddar cheese
1 cup grated Monterey Jack cheese
1/2 cup shredded Asiago cheese
1 teaspoon parsley flakes
1/4 teaspoon paprika
Pinch of cayenne pepper

Preheat oven to 350 degrees F. Place bread on a large baking sheet; set aside. In a medium saucepan over medium heat, melt butter. Add green onions and garlic; cook until just tender. Add cream cheese; cook, stirring frequently, until melted and fully incorporated. Remove pan from heat; let cool. In a large bowl, combine cheddar cheese and remaining ingredients. Stir in cream cheese mixture until combined. Spread evenly on both sides of bread. Bake until cheese is melted and bread is crispy, 10-12 minutes. Makes 6-8 servings.
