Creole Crab and Avocado Salad

I hope you all had a wonderful Thanksgiving. Ours was exceptional. This year we celebrated the holiday at my sister-in-law’s house with 34 of the hubby’s closest relatives—his parents, siblings, their families and his double first cousins and their families. I think I’ve mentioned Larry’s double first cousins before. Remember? One of his dad’s brothers married one of his mom’s sisters. They had four kids who are now all grown up with kids of their own. Cool, huh? I think so. Anyway, as you might expect, this group—which currently spans three [ ... ]

Green Olive Potato Salad

I have issues with pickle relish. Under the right circumstances, I like it on hotdogs and my Creole Tartar Sauce wouldn’t be the same without its punchy kick. But that’s about it. I don’t care for relish in deviled eggs and I really don’t enjoy it in egg salad, tuna salad or potato salad. My preference for non-relish versions of these indispensable spring and summer staples dates back to my childhood. I grew up in a non-relish family and didn’t recognize the full impact of that until I began mentally dissecting other people’s food and [ ... ]

Finger Food Friday: Ponchatoula Strawberry Salsa

I introduced you all to this salsa last May when I was celebrating Cinco de Mayo South Louisiana-style. Remember my Gulf of Mexico Shrimp Tostadas? This salsa was one of the garnishments. But since it’s finally spring and one of the sweetest signs of spring in the GNO (Greater New Orleans Area) is the appearance of fresh, Louisiana strawberries at local farmer’s markets and grocery stores, I thought it was only right to give this salsa its own time in the spotlight. Because besides being the perfect sidekick to shrimp tostadas, Ponchatoula Strawberry Salsa is also [ ... ]

Finger Food Friday: Tangy Avocado and Feta Dip

My passion for guacamole is similar to my passion for gumbo to the extent that I’m always searching for the best version of each every time I eat out. Granted, I’ve never found the two occupying the same menu (although in New Orleans that cross-cultural thing may occur somewhere). But you know what I mean. Every time I visit a new Mexican or other type of Latin restaurant, I begin my meal with guacamole. And every time I visit a typical New Orleans joint back home for the first time I order some version (usually seafood [ ... ]

Grilled Potato Salad with Onions and Jalapeños

Here’s the recipe for the potato salad I made last week to go along with my Grilled Skillet Steak. The potatoes, like the steak, are cooked twice. They are first parboiled then grilled making this side dish just as flavorful and exciting as the main. If you plan on serving the two together like I did, put the potatoes on to boil right before you throw the steaks on the grill. After you remove the steaks from the grill, place a grill pan next to the preheated cast iron skillet and finish both the steaks and the potato medley at [ ... ]

Grilled Calamari

This summer, I’m grilling out more than ever. Aside from being a lover of all things hot and humid, I’m still trying to shake the chill from Snowmageddon 2014. Was that not the worst? Okay, maybe not a big deal for some of you. But for this Deep South girl, it was catastrophic. For the life of me, I cannot understand how people endure that type of weather year after year. I’ll take the sweltering heat, runny makeup and sweat-stained clothes over that any day! Which brings me back to the grill, on [ ... ]

Zesty Penne Pasta Salad

Memorial Day Weekend is upon us. The unofficial start of summer is here. And while most of you will be frolicking about in bathing suits on boats or beaches or hanging with your besties at barbecues or boils, I’ll be hold up inside with two very unhappy children who need to study for final exams. I think this is the first year since my kids have been in school that they have to return after Memorial Day. It has certainly put a damper on our holiday plans. Maybe we’ll be able to squeeze in a [ ... ]

Wilted Kale Salad with Brie Croutons

Do you have your New Year’s Day menu worked out? I’m preparing my Black-Eyed Peas with Jalapeño Oil along with cabbage and pork. I just haven’t decided on what cabbage and pork dishes to make. On the cabbage front, I’m debating between Smothered Cabbage and Cabbage Casserole. Both call for sausage and cheese, but the Cabbage Casserole also includes rice and boat loads of cheese–it’s a meal in itself. The Smothered Cabbage is on the lighter side with its turkey sausage and tangy kick of feta cheese. As for the pork, I’m craving my [ ... ]

Creole Mustard Vinaigrette

Creole mustard, how do I love thee? Let me count the ways: Transformed into a Sweet and Tangy Dipping Sauce; Stirred into a rocking Remoulade Sauce; Tucked inside Crescent City Cocktail Meatballs; Blended to make Better Cheddar; Schmeared on hot dogs; Slathered on French fries; Elevated in Cajun Egg Rolls; Twice Cooked with Corned Beef; and Whipped into a delightfully tangy salad dressing (which also doubles nicely as a dashing dipping sauce for steamed veggies, especially artichokes)! Creole Mustard Vinaigrette Recipe 1/4 cup Zatarain’s Creole Mustard 1/4 cup red wine vinegar 2 teaspoons grated Parmesan cheese 1 garlic clove 1/4 teaspoon Lea & Perrins (Worcestershire sauce) 1/2 teaspoon kosher salt 1/8 teaspoon pepper 1 cup extra virgin olive [ ... ]

Family Reunion Cabbage and Ramen Salad

This past week, I had an occasion that required me to prepare a couple of dishes that could feed a large number of people.  The first recipe that came to mind what this cabbage salad.  I love this salad.  My family loves this salad.  Everyone who tries this salad loves this salad.  But for some reason, I haven’t prepared it at home in years.  Which means I’ve never shared it will you all!  I’m still struggling to figure out that one.  But now, I’m making up for lost time!  By this Sunday, I will have made it three times in [ ... ]
