Finger Food Friday: Irish Channel Stout Cupcakes

Over the past week or so, I’ve been searching for a fun St. Patrick’s Day recipe to create and share with y’all. Although I was initially thinking of something savory, this happened—boozy cupcakes. If you spend anytime on social media, you know that this time of year Guinness and Irish liquor inspired sweets are all the rage. So, I finally jumped on the bandwagon. Having recently fallen hard for NOLA Brewing’s Irish Channel Stout, it was tough not to. Irish Channel Stout is the Guinness of New Orleans—only better. Yes, I’m partial to [ ... ]

Finger Food Friday: Roasted Garlic, White Bean and Artichoke Dip

This dip is the epitome of a “pantry recipe.” You know, one of those quick, easy and yummy dishes prepared on the fly with ingredients found in, well, the pantry. A last-minute meal if you will to sate eleventh hour invitees, unannounced guests or a hungry husband and three ravenous teens. Most of the time, I make a pantry recipe once and never recreate it because I fail to write down anything. And my vague recollection of what I created the first go-round never tastes the same despite repeated attempts. But fortunately with this dip, [ ... ]

Finger Food Friday: Ponchatoula Strawberry Salsa

I introduced you all to this salsa last May when I was celebrating Cinco de Mayo South Louisiana-style. Remember my Gulf of Mexico Shrimp Tostadas? This salsa was one of the garnishments. But since it’s finally spring and one of the sweetest signs of spring in the GNO (Greater New Orleans Area) is the appearance of fresh, Louisiana strawberries at local farmer’s markets and grocery stores, I thought it was only right to give this salsa its own time in the spotlight. Because besides being the perfect sidekick to shrimp tostadas, Ponchatoula Strawberry Salsa is also [ ... ]

Finger Food Friday: King Cake Truffles

Valentine’s Day is tomorrow. The Saturday before Mardi Gras. That means this year that Hallmark holiday is not going to receive a whole lotta love in the Crescent City–at least not from me and several thousand of my closet friends who will be hanging out on the parade route. Nope. For us, purple, green and gold will trump red and pink. And we will toast our sweethearts and the Olympian God of Fertility and Eternal Youth–Endymion–with Mardi Gras go-cups full of beer and Carnival cocktails while indulging in sexy street food consisting of mini-muffulettas, mini-poor [ ... ]

Finger Food Friday: Garlic Dip

Garlic dip in its simplest form is a block of cream cheese and garlic. As much fresh garlic as you can stand. Back in the early 1970s, when I first mixed those two ingredients together, I knew I had found a finger food for life. I could devour an entire bowl of that dip in one sitting with the help of nothing more than a bag of chips. Or was it a tin of Charles Chips? Oh, and on those occasions when there were no chips to be found, a sleeve of saltine crackers worked [ ... ]

Chewy Oatmeal Cookies

My kids have been back in school for only a month now and I’m already struggling with school snacks. Mind you, all three are beyond designated snack times. But to get them through their long days, I need to stash their lunch bags with extra food. Since they have already grown tired of my old faithfuls–turkey jerky, cheese sticks and nuts–I started making one scratch sweet a week. Nothing too over the top. Last week, I made two batches of my Three Ingredient Muffins (I have 3 kids and a midnight-snacking husband; they go fast). This week I jumped on [ ... ]

Grandma Benson’s Peach Cobbler

Grandma Benson was the hubby’s maternal grandmother who, unfortunately, passed away before he and I began dating.  I did not have the pleasure of meeting her or sharing a meal at her table.  I was, however, put to the Grandma Benson “test” early on in our relationship by a couple of Larry’s cousins (whose names shall remain anonymous) along the Uptown parade route no less.  It was the typical, old-school New Orleans line of interrogation:  “Who’s your mama?”  “Are you Catholic?” and “Can you make a roux?”  (The latter question also generally means, can you cook.)  Thankfully, my mother was [ ... ]

Finger Food Friday: Crescent City Sin

If you live in the south or have ever done any SEC tailgating, you’re probably familiar with Mississippi Sin or, as it’s called by some, Mississippi State Sin. It’s a devilishly delicious dip dotted with specs of ham and chopped green chiles that apparently originated in the kitchen of some big MS Bulldog fan. Up until a few months ago, I had only heard of this Southern college game-day tradition. Then, while flipping through a community cookbook my mom recently gave me (The 2nd Annual South Area Diversity Cookbook of the USPS), I came across the recipe [ ... ]

Finger Food Friday: Three Cheese Roasted Red Pepper Dip

Jarred roasted red peppers, cream cheese, shredded mozzarella and chips (oh, and craft beer :-)) are refrigerator and pantry staples in my house.  There’s a lot I can do with those ingredients.  Plus, they all have a healthy shelf life.  This time year, I find it especially important to have several flavorful and flexible items like those on hand.  Alone or combined, they can spruce up chicken breasts, dress up pasta, flavor French bread (think French bread pizza), spiffy up salad greens or seafood and create inviting and impromptu appetizers.  That’s basically how this finger food came to be.  Last [ ... ]

Finger Food Friday: Blue Cheese and Bacon Chips

Hello Finger Food Friday fans! My apologies to all for my lack of end-of-the-week, happy hour yummies. It’s just that lately there’s been no fun in our Fridays. The hubby and I have been working overtime and chauffeuring the kids here and there in between. Today, however, our plan is to chill. Hoping to hangout on the patio for a few hours and take in our beautiful weather (which is about to turn ugly thanks to that mean girl in the Gulf) and enjoy some much-needed downtime. I haven’t nailed down our menu as [ ... ]
