Back in October, while scrolling through my “Who to Follow” list on Twitter, I came across this fella by the name of Andrew Evans who was tweeting all these wonderful and interesting things about New Orleans. After a couple of clicks here and there, I found out that Andrew is National Geographic Traveler magazine’s Digital Nomad who was in the Crescent City as part of a month-long exploration of South Louisiana. Throughout his trip, Evans tweeted, blogged and vlogged his travels on his Twitter account @WheresAndrew, his NationalGeographic.com’s Digital Nomad blog and his Facebook page. During this time of year, Louisiana Gulf oysters are at their peak with a balanced flavor of salty-sweet and a silky texture with a meaty bite. Their subtle goodness adapts well to all kinds of preparations and ingredients, which is why they’re figured into so many New Orleans holiday menus. My relatives celebrate the season with oysters eaten raw, Rockefellered, fried and even chargrilled. But the dish that reigns supreme has and always will be Oyster Dressing.

I just received my copy of Lost Restaurants of New Orleans, and the recipes that made them famous, by Peggy Scott Laborde and Tom Fitzmorris. Let me say, I’m having a hard time putting it down! The pictures, the recipes and the historical overviews … it’s an amazing collection of 40 years of dishing and dining in our great City. I’m only 21 turns into it and I’ve already been struck by nostalgia thanks to the pages recalling The Andrew Jackson.

In New Orleans, there’s pot roast and then there’s Creole Daube. Creole Daube, or daube (pronounced “dohb”) for short, is what you get when you blend a French braising technique with an Italian (“red”) gravy and a roux–the typical melding of flavors, cultures and cuisines that takes place in most New Orleans family kitchens on a daily basis. WOW! The first weekend of the New Orleans Jazz & Heritage Festival ranks up there with the best of the best. I couldn’t wait to get back in front of the computer to tell you all about it! Granted, I could have Tweeted my way through it all to keep you in “real time.” I simply chose not to. I needed to disconnect. Truly live in the moment. Besides, my hands were full. Very busy. We’re gearing up for JazzFest here at Raised on a Roux! It’s one of our favorite times of the year and an annual date weekend for me and the hubby (thanks to wonderful babysitting grandparents my mom, John, V & Poppy). Each year we visit the Fest with open minds and empty bellies and we always leave with at least one new piece of local art, one new musical artist to follow, full bellies and lots of fond memories.

Are you ready for some football? I’m not. Truth be told, I didn’t plan on doing a Super Bowl post or even watching the game this year. I guess I’ve been trying to avoid the event altogether, because come Sunday our beloved Saints will no longer be the reigning Super Bowl champs. I get the once a champion, always a champion thing. But when you’re the reigning champs you get 12 months of extra attention. I’m probably one of only a few home cooks who has ever reduced a recipe for Red Beans and Rice to writing. Most recipes like these are created and passed on stove-side by moms, dads, grandparents and other relatives. And while the general ingredients and instructions are neatly tucked away in their memory banks, the specifics rarely make it to paper. That’s typical of many family recipes. Just the other day, I was flipping through an old cookbook when out fell a recipe from the food section of the Times-Picayune, New Orleans’ daily newspaper. The clipping, which obviously had a few years on it, was a recipe for Crabmeat & Brie Soup from The Dakota, a suburban New Orleans restaurant. I had a vague recollection of that recipe and a similar one involving brie from Flagons A Wine & Bar Bistro. (Flagons was another great New Orleans restaurant that closed many years ago.)
