A couple of weeks back, we made our annual pilgrimage to Pike’s, our local gardening center, for some colorful annuals to brighten up our patio, a wide assortment of herbs for warm-weather cooking and several vegetable and fruit plants for the kids’ garden. Every year I approach the holidays with what I believe to be a good balance of excitement and caution. Jarred roasted red peppers, cream cheese, shredded mozzarella and chips (oh, and craft beer :-)) are refrigerator and pantry staples in my house. There’s a lot I can do with those ingredients. Plus, they all have a healthy shelf life. This time year, I find it especially important to have several flavorful and flexible items like those on hand. Alone or combined, they can spruce up chicken breasts, dress up pasta, flavor French bread (think French bread pizza), spiffy up salad greens or seafood and create inviting and impromptu appetizers. Hello Finger Food Friday fans! My apologies to all for my lack of end-of-the-week, happy hour yummies. It’s just that lately there’s been no fun in our Fridays. When we were young, my mom introduced me, my sister and my brother to a couple of quick and fun ways to make pizza at home. One method involved flattening canned biscuits and topping them with leftover red gravy and whatever else we could find in the fridge. Ham, bacon, black olives, onions and cheese made frequent appearances. We loved the novelty of those pizzas and made them frequently, especially for afterschool snacks. I know I sound like a broken record when I talk about how I’m not a baker and don’t really enjoy the process. On the rare occasions when I do bake, however, I expect those items to be the best they can be. The hubby and I have been together almost 20 years (I was really, really young when we starting dating. Wink! Wink!). And while we’re not the perfect couple, we do pride ourselves on working hard at keeping our relationship strong. A big part of that is carving out time for each other. I have certain simple finger foods I adore. Simple in that they require little to no cooking. Let me tell you about three of them. The first is canned sardines on Triscuits (Garden Herb being my number one choice) with yellow mustard. Not a fan of sardines? Too bad, because these are fast food heaven. In New Orleans, dining out on Friday nights during Lent at any restaurant that serves seafood is, for lack of a better term, a sport. Although the name of this recipe sounds redundant. It’s not.
