Finger Food Friday: Creamy Spinach Stuffed Mushrooms

A couple of weeks back, we made our annual pilgrimage to Pike’s, our local gardening center, for some colorful annuals to brighten up our patio, a wide assortment of herbs for warm-weather cooking and several vegetable and fruit plants for the kids’ garden. This springtime ritual is always an adventure. If we’d let them, the kids would spend hours and thousands of dollars filling our carts with everything edible. That sounds great, but their enthusiasm and lack of understanding of just how difficult it is for their mother–me–to successfully grow anything always leads to disappointment. One of many tough [ ... ]

Finger Food Friday: Smoked Salmon Chips

Every year I approach the holidays with what I believe to be a good balance of excitement and caution. Excitement over the magic of the season and making the most of all the food, fun, family and friends that come with it. Caution not to overdo it. This year, let’s just say I got overly excited and threw caution to the wind. Put another way, I ate and drank too much and stayed up past my bedtime more often than not. It’s left me tired, bloated and a tad cranky. And with New Year’s [ ... ]

Finger Food Friday: Three Cheese Roasted Red Pepper Dip

Jarred roasted red peppers, cream cheese, shredded mozzarella and chips (oh, and craft beer :-)) are refrigerator and pantry staples in my house.  There’s a lot I can do with those ingredients.  Plus, they all have a healthy shelf life.  This time year, I find it especially important to have several flavorful and flexible items like those on hand.  Alone or combined, they can spruce up chicken breasts, dress up pasta, flavor French bread (think French bread pizza), spiffy up salad greens or seafood and create inviting and impromptu appetizers.  That’s basically how this finger food came to be.  Last [ ... ]

Finger Food Friday: Blue Cheese and Bacon Chips

Hello Finger Food Friday fans! My apologies to all for my lack of end-of-the-week, happy hour yummies. It’s just that lately there’s been no fun in our Fridays. The hubby and I have been working overtime and chauffeuring the kids here and there in between. Today, however, our plan is to chill. Hoping to hangout on the patio for a few hours and take in our beautiful weather (which is about to turn ugly thanks to that mean girl in the Gulf) and enjoy some much-needed downtime. I haven’t nailed down our menu as [ ... ]

Finger Food Friday: Andouille French Bread Pizza

When we were young, my mom introduced me, my sister and my brother to a couple of quick and fun ways to make pizza at home. One method involved flattening canned biscuits and topping them with leftover red gravy and whatever else we could find in the fridge. Ham, bacon, black olives, onions and cheese made frequent appearances. We loved the novelty of those pizzas and made them frequently, especially for afterschool snacks. The other style was French bread pizza. As the name suggests, the base of those pizzas was French bread. And again, the toppings [ ... ]

Finger Food Friday: Chocolate Chip Cookies

I know I sound like a broken record when I talk about how I’m not a baker and don’t really enjoy the process. On the rare occasions when I do bake, however, I expect those items to be the best they can be. When it comes to chocolate chip cookies (the number one sweet finger food in this house), the best of the best in my book are ones with crispy exteriors and chewy, borderline cakey, interiors. I’ve been working on this recipe for years and I think I’ve finally got it exactly where I want it–just in time for [ ... ]

Finger Food Friday: Fried Soft-Shell Crab Poor Boys

The hubby and I have been together almost 20 years (I was really, really young when we starting dating. Wink! Wink!). And while we’re not the perfect couple, we do pride ourselves on working hard at keeping our relationship strong. A big part of that is carving out time for each other. We frequently schedule lunch dates and sneak in the occasional night out. But all those outings combined don’t come close to measuring up to the kidless weekends we share each year at the New Orleans Jazz Fest! We’ve been enjoying these date [ ... ]

Finger Food Friday: Egg Salad Toasts

I have certain simple finger foods I adore. Simple in that they require little to no cooking. Let me tell you about three of them. The first is canned sardines on Triscuits (Garden Herb being my number one choice) with yellow mustard. Not a fan of sardines? Too bad, because these are fast food heaven. And, as far as I’m concerned, the only way to eat canned sardines. This is also a very special finger food. Special because my late maternal grandfather, Papa, introduced me to sardines (on saltines) and special because the only other person that [ ... ]

Finger Food Friday: Fried Oysters

In New Orleans, dining out on Friday nights during Lent at any restaurant that serves seafood is, for lack of a better term, a sport.  That’s because the crowds are large, the waits are long and the weather is oftentimes questionable (a big issue when you’re forced to wait out in a shell parking lot).  A finely tuned playbook, complete with the abilities, expectations and limitations of each person in your party, is a must.  So are sandwich bags full of Cheerios (if you have little ones), cell phones with fun games (if you have middle ones) and a padded [ ... ]

Finger Food Friday: Mixed Grill Grilled Provolone

Although the name of this recipe sounds redundant. It’s not. This finger food is one part “mixed grill” and one part “grilled provolone.” Put the two together and you’ve got an outrageously rocking herbaceously spicy, cheesy, Cajun meets Italian meets Argentinian masterpiece, if I must say so myself. Now I’m not one to toot my own horn. Really, I’m not! But if you love the fab trio of andouille, shrimp and chicken (think jambalaya and gumbo), the smoky goodness of roasted poblano peppers and grilled onions, the tang and bite of an almost-chimichurri sauce and the pronounced flavor of a [ ... ]
